¾ cup raisins
½ cup apple juice
2 Tablespoons honey
2 teaspoons ground cinnamon
1 cup creamy peanut butter
Place raisins and apple juice in a small saucepan and bring to a boil. Reduce to medium heat and simmer till raisins absorb juice. This may be quick. Stir in honey and cinnamon. Cool slightly before stirring in peanut butter.
Try this on graham crackers, saltines, bread, mini-bagels, or celery sticks.
Recipe from California Raisin Board.
Mom’s notes: I didn’t mention that If you wind this up in a flour tortilla and slice it makes a decorative pinwheel. If you spread it on bread, top it with banana slices, and cook it like a grilled cheese, I’ve read it tastes good.
