Easy Greens
1 bunch collard greens
1 bunch mustard greens
1 bunch turnip greens
3 strips of bacon
1 large onion
Salt and pepper to taste
Take the bunches of greens and rinse thoroughly, cut into strips horizontally and diagonally so the greens are manageable and close to bite sized pieces.
Place a large pot of water and set it on medium heat.
Dice the onion.
Place the greens and onion in the stock pot along with three strips of bacon. Reduce heat and let cook for an hour. Be sure to check the water from time to time. Use slotted spoon to remove and serve.
