Cherry Salad Supreme by My Mom, Verda
This is a recipe my Mom wrote and shared with her Mom. After Grandma died my Mom put all of Grandma’s recipes in her own recipe box. After Mom passed, I asked for the whole recipe collection. I love keeping Mom and GMa close to me through their recipes and memories of love.
First layer:
- 1 package of raspberry Jello
- 1 cup boiling water
- 1 can cherry pie filling
Dissolve Jello in the boiling water. Add cherry filling. Put in 9x9x3 dish (or equivalent) and let set.
Second layer:
- 1 package lemon Jello
- 1 cup boiling water
- 1 – 3oz package cream cheese, room temperature
- 1/3 cup mayonnaise
- 1 – 8oz can crushed pineapple, undrained
- 1 – 8oz Cool Whip
Dissolve Jello in boiling water and let cool slightly. With mixer, blend cream cheese (room temp) and mayo, then gradually add cooled Jello. Add pineapple (undrained) and Cool Whip.
Pour over red layer and let set. Garnish with chopped nuts, if you like.
P.S. Sometimes I use only 1/2 (but no more than 3/4) the container of Cool Whip, as it makes a lot. Be sure your dish is at least 3 inches deep.
