4 cups cooked, drained, and chopped squash

1 medium onion, chopped

12 crackers, crumbled

½ cup Cheddar cheese, shredded

2 eggs, beaten

½ cup sugar

1 teaspoon salt

3—4 sausage patties, cooked and crumbled

¼ cup oleo, melted

Using a large mixing bowl, combine all ingredients in order listed.  Preserving some cheese to sprinkle on top.  Pour into well-greased 2-quart baking dish and sprinkle with cheese.  Bake at 350°F until cheese is melted.  Makes a large amount. 

[Editor’s note:  Earlier in oleo history, it came as a cream colored solid with a yellow coloring tablet and it was squeezed and massaged until the mixture was butter colored. Oleo was a margarine (oleomargarine) product in the distant past originally created for Emperor Napoleon from beef fat and other ingredients, but as time and technology have advanced, it is now plant-based oils transformed into a solid during the hydrogenation process, which we call margarine.)
