As the war raged on, Union Troops would often raid the food stores of the Confederate soldiers but would ignore the black-eyed peas.
During the harsh winter, with few options, Confederate soldiers survived on the undisturbed beans left behind.
As time rolled on, the black-eyed pea became a symbol of fortune and prosperity for the South.
Now the simple and unassuming bean is more commonly accepted and sought after.
