Ingredients

6 medium potatoes, boiled in their skins

6 tablespoons butter (or margarine), divided

2 cups shredded cheese

1½ cups sour cream

½ cup onion, chopped

½ cup green pepper, chopped

1 teaspoon salt

¼ teaspoon black pepper

½ cup pimento (optional)

Instructions

Peel and slice the potatoes.  Melt 2 tablespoons of butter in a 9 x 13-inch baking dish.  Add the potatoes.

In a saucepan, heat 4 tablespoons butter and the cheese until melted.  Remove from heat.

Add the sour cream, onion, green pepper, salt, black pepper, and pimento.  Pour over the potatoes.  Bake in a 350°F oven for 30 minutes.  Yields: 8 servings.  Recipe originally by Ruby Finley, Newton, Arkansas.
